Petticoat Tails
This is my Gran’s recipe and one of our family’s favorite cookies–a light shortbread cookie. They’re like potato chips–can’t eat just one!
- 1 cup soft butter
- 1 cup sifted powdered sugar
- 1 tsp flavoring–vanilla, almond, rose etc.
- 2.5 cups sifted white flour
- 1/4 tsp salt

Cream butter, sugar and flavorings until well combined.

Sift the flour and salt together and add to the creamed mixture.

Mix the dough thoroughly, with your hands if necessary, until it is not crumbly. (This is a dry dough so the hand mixing is sometimes necessary.)

Press and mold the dough into a long, smooth roll about 2 inches in diameter.

Wrap in wax paper and chill until stiff – at least 2 hours or overnight if the wax paper is sealed well to prevent drying out.

With a sharp knife, cut the log into thin slices (1 / 8 to 1 / 16 of an inch thick). Adjust baking time if you slice them thicker.

Place the slices on an ungreased baking sheet–this is a good cookie for parchment paper!–and bake at 400º F for 8 – 10 minutes.

Makes about 3 dozen two inch cookies. Easy recipe to double–but remember, they’re like potato chips!
